Every morning, Lariwala (Stollman) sell Khaman to working people where I grew up. Today I sharing very interesting and very famous breakfast recipe of surat, that is vaati dalana khaman. This khaman eat as snakes or as morning break fast in. Vaati Daal Na Khaman is distinct from the Nylon Khaman in the sense that they are made of Chana Daal, that has been soaked, ground and fermented overnight and does not have any soda or citric acid in the batter, at least my version doesn't.
Instructions to make Vati dal na khaman:
- Put water in chana dal and rice for 6 hours..
- Take some yogurt and grind them..
- Add all ingredients ginger and chili pest, turmeric, salt, suger,citric acid and leave over night..
- Next day take small plate and gris with oil.take one small bowl and take 3 big spoon batter and put 1/2 tsp eno 1spoon oil and water mix well..
- Steam them for 10 min and when is done wait until cold and after cut them..
- For tadka take 6 tbsp oil, mustard seed, hing,green chili and curry leaves..
- Ready to eat enjoy my recipe..
It is dense and crumbly at the same time unlike the soda-induced sponginess of Nylon Khaman. Its very Easy and Simple to make.
